I’ve been working on the same post for days now. It’s not that difficult of a subject, but I seem to be having trouble saying what I want to say.

So, I decided to post this yummy, time-saving bran muffin recipe for now, while I finish up the aforementioned post. This recipe makes a gallon-size container, which you can store in the fridge for up to 2 months.

AGGIE’S MUFFINS

2 cups boiling water

2 cups quick oats

2 cups All Bran

2 cups shredded wheat, crumbled

4 eggs

3 cups sugar

1-1/8 cup butter, very soft, close to melted

1 qt. buttermilk

5 cups flour

5 tsp. baking soda

1 tbsp. salt

Mix quick oats, All Bran and shredded what with boiling water and let cool. Beat eggs until light and fluffy. Add sugar, butter and buttermilk. Mix with cereals, then add flour, baking soda and salt. Store in one gallon container.

Bake in muffin tins at 375° for 25 minutes.

Can stir in raisins, dried cranberries, fresh berries, banana chunks, nuts or seeds. My personal favorite is fresh cranberries.

These make a relatively healthy breakfast or snack. I like to have them ready for the kids when they get home from school.
