Such a simple recipe, yet so versatile and tasty, sweet rice is a dish my sister first tasted at her friend’s house. She raved about it so much, the rest of us wanted to try it. Her friend’s mom must have gotten wind of our desire to sample the recipe they had brought from their native Norway because they had us all over for sweet rice, a main dish staple in their home. We fell in love with it immediately and my mom came home with the recipe.

Sweet Rice
2 cups rice
4 cups water
2 quarts milk
Cook rice in water according to package directions. Combine with milk in a large pot. Bring to a boil and then simmer for 1-1/2 to 2-1/2 hours. Bring to a boil again and add 2 tsp. salt. Sprinkle with cinnamon and sugar to serve.
Leftover sweet rice makes a fabulous breakfast. I haven’t had sweet rice in years, but I think it’s high time to introduce my kids to it. Maybe it’ll end up being one of the few dishes they all actually like.
