A new favorite

Andie loves to look for new recipes to make, bless her heart. She is particularly fond of Allrecipes.com, where she often goes to enter ingredients we have on hand in order to find something to whip up for supper.

Tonight’s Shepherd’s Pie was a huge hit. It was comfort food at its finest. I’ve never had Shepherd’s Pie before, so I have nothing to compare it to, but it was one of the more tasty home-cooked meals I’ve had. The potatoes were fluffy and creamy, the hamburger had just a bit of tang and the carrots were soft and sweet. Even ultra-picky Cody liked it.

Here’s what you need to make this delicious dish:

Ingredients

  • 4 large potatoes, peeled and cubed
  • 1 tablespoon butter
  • 1 tablespoon finely chopped onion
  • 1/4 cup shredded Cheddar cheese
  • salt and pepper to taste
  • 5 carrots, chopped
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 pound lean ground beef
  • 2 tablespoons all-purpose flour
  • 1 tablespoon ketchup
  • 3/4 cup beef broth
  • 1/4 cup shredded Cheddar cheese (Andie used 3/4 cup)
